PRODUCTION AREA AND HARVEST TIME
Maruggio / Sava – The grapes are hand-picked at the beginning of September; just after the harvest, the grapes are crushed in a small winery in Manduria, respecting strictly all what the disciplinary vinification rules state.
AT THE WINERY
The grapes are crushed and destemmed softly. The maceration lasts about 2 weeks. The resulting wine ages for 12 months in stainless steel tanks and then in some small French oak barrels.
AGEING POTENTIAL
The wine is ready after 6 months of bottle ageing and has a life of not less than 15/20 years.
