“Salice Salentino Negroamaro” is one of the first denominations created in Puglia; it was, in fact, established in April 1974. The geographical area for the production of this important DOP comprises 7 towns in the north of the Salento region of which Guagnano is one. DieciAnni Salice Salentino Negroamaro has a dense colour with soft garnet-coloured shades. The nose is complex and suggestive of flavours ranging from the typical hint of tobacco to vanilla. On the palate are hints of bitter almond and powerful tannins.

PRODUCTION AREA AND HARVEST TIME

Guagnano – the harvest is carried out by hand in the second 10 days of September.

AT THE WINERY

The grapes macerate for about 7 days in stainless steel tanks at 26-28°C. The resulting wine is aged in French oak barrels for about 6 months.

Ready-to-drink wine or to be kept for at least 4/5 years

SERVING TEMPERATURE – FOOD MATCHINGS 

18°C – Octopus alla pignata (cooked in a clay pot); meat with Genovese sauce; lamb braised in tomato sauce with peas; aubergine parmigiana.
