SIGNOR NEGROAMARO

Negroamaro is the most widespread grape variety in Puglia, but its true history is not yet known. Its name itself has uncertain origins: it is believed that it comes from the dialectal terms “niuru maru” (black and bitter) or from the combination of the Latin word niger and mavros, both indicating the typical black color of the grapes. This experience will lead you to discover some of the most important and award-winning wines of the cellar, expressed in many different types of rosé and red in purity. The cultivation techniques used in Salento, the refinement of the native Negroamaro and Primitivo wines will be illustrated

LA MARENNA

In Salento the Marenna stands for snack. It is a term borrowed from the Neapolitan dialect at the time of Masaniello. The origin of the name is linked to the sea and sailors: in fact, at that time, one of the main ingredients of this snack consisted of anchovies, large quantities of which were caught and salted at home. In the peasant world, however, Marenna meant a kind of quick and frugal breakfast, which was eaten in the shade of a large tree or in a pagghiara (rural construction made with stones) and made with frisa (ancient bread for sailors).  Otherwise, a slice of durum wheat bread with cherry tomatoes (in winter, the yellow "pendula" ones), dried vegetables such as courgettes and aubergines, oregano and, at will, with salted anchovies and spring onion. Everything was dressed with good olive oil. With us, in the cellar, the Marenna is offered in different variations, depending on the season and the availability of fresh products.
